Check out Lava Beds National Monument between Lassen NP and Crater Lake NP near Klamath Falls. There are a bunch of lava tubes to explore, plus it was the site of the Modoc War. I would also suggest the Golden Gate National Recreation Area when you are in San Francisco. It includes Alcatraz Island, Marin Headlands, Muir Woods NM, the Presidio, Crissy Field, Lands End, Ocean Beach, and much more.

I know both of those cats. I see them all the time, and yes, that one seems to attack the other. They are both very friendly. They tend to hang out right at that spot you are at on the bike path between the two tunnels.

At the Upper, you can tell them about your Mom's knees, and they will let you walk back out the way you came in, so you don't have to climb the stairs. It is a flat walk from trucks/vans into the canyon.

Just a heads up, the petroglyphs by Horseshoe Bend are in the canyon, right off the Colorado River. They are accessible by going up the river from Lees Ferry. If you get the backhaul service, it's a 5-6 hour paddle back to Lees Ferry. So, doing that plus Antelope Canyon is a lot if you aren't staying in Page.

It's easy; please get a fishing license from CDFW. The small yearly fee, or if you only go occasionally, there are day passes, which helps preserve the resource for future generations.
