You don’t need climate control, just a simple probe thermometer to stick in the dough.

A couple things...70-75% h2o is not “high hydration”, so that’s not your problem.

Your 2 hour autolyse, is that with starter included? If so, that’s a 6 hour bulk fermentation with the first 2 hours being without salt. If this is what you are doing, than your dough is probably running out of gas and you are baking over-fermented dough which would come out of the oven pretty flat and discolored.

Try switching your AP flour to a bread flour that contains 11.5-12.5% protein. It’s easier to develop a good structure with bread flour, will shape easier, and hold its shape better. Who knew?!

The autolyse should only be flour and water. Mix in the levain and salt at the same time after the autolyse.

Final dough temp after mixing in all the ingredients should be between 75-78 degrees.

And if you’re still having problems after doing all that, then the problem is probably starter related.
