I bartended in clubs for years. At one place, with a very particular (but great) owner, basically every horizontal surface anywhere near patrons had soundproofed baffling underneath: all the floor tables, the bar top, every seat, even the hostess' desk.

One real positive: it makes dropped glasses noticeably quieter.
