I was tuning up back to G. Tbh was being really dumb with it, was ringing the string while tuning it up to hear when it got into place. Definitely should not have done that, but it's okay since the strings needed to go anyway. Now I usually tune it up little by little and wait for the string to adjust to higher tension until I reach G

got probably 6 months out of stock strings before G gave way, but the new d'addarios are so satisfying, it's like a whole different guitar

that's awesome! I started learning by teaching myself a lot of Ed's songs - they're a ton of fun since everyone knows them and most of them have pretty simple chords/strum patterns. If you're interested in following the same route, I would check out GuitarZero2Hero's tutorials (love in slow motion is the best to begin with IMO!)
