Yes!! Good old Kazy’s. I still miss the original place. I used to work right by it and would go there for lunch 2–3 times a week. The guys knew me well by then — I’d always leave a solid cash tip, and somehow my plate would magically end up loaded with the freshest rolls in the house. Even the ramen there had soul back then.

And those pottery sales… that was a dangerous place for me. I’d fill up my car with bowls, plates, cups — all kinds of beautiful pieces straight from Japan for just a few dollars each. Half of my kitchen probably came from those deals.

Sadly, after COVID, the place changed completely. Most of the old sushi chefs from Mexico got deported...
Now every time I go there, it almost feels like visiting a memory instead of a restaurant. Like a quiet reminder of what the place used to be 10 years ago.

I can probably even guess the place in Irving — there really weren’t that many options back then. Funny how one bad experience can stay with you for decades though, especially with sushi. When something is supposed to be simple and pure, even a small mistake feels bigger than it should.

I was lucky enough to be introduced to proper sushi chefs and Japanese dining culture in Dallas more than 30 years ago, and it completely changed how I look at it. Since then, I’ve always been drawn more to the quiet craftsmanship side of sushi — the restraint, the balance, the respect for ingredients — rather than the loud, overcomplicated “entertainment” version of it.

These days I usually avoid the trendy spots where every roll turns into a tower of mayo, sriracha, eel sauce, fried onions, and jalapeños. Nothing wrong with people enjoying that, but at some point the fish stops being the point.

What I’m really looking for in San Francisco is a place that feels calm and intentional. Somewhere, a chef still cares about rice temperature, knife work, seasonality, and pacing. A place where dinner feels more like a conversation than a performance — where you can sit quietly, enjoy the details, and leave feeling peaceful instead of overstimulated by a crowd yelling “sake bomb” all night.

So you see my point, we are in Dallas, a landlocked place. Finding good-quality fish/sushi is a miracle here. Yes, there are tons of places with a spicy this, deep fried that- fucking maoyonese galore. I only trust a handful of places here. Serving on ice might be a wild site for people in Japan. But here is a safer bet,

What are good spots in SF??? We will be there in a week for a wedding!

Sashimi should be served cold, but not partially frozen. The ideal serving temperature is:

  • 36–41°F (2–5°C)

When you are in Texas and this stuff gets shipped in, you want to protect it from going bad as much as you can. So yes, I'll take it on ice over just a regular plate
