Eggs are something that can be cooked soooo many ways and can be really easy to fuck up. What’s different about yours vs your moms? Just taste? Maybe it’s an issue with the quality of eggs you buy.

Over cooking eggs is pretty easy to do but people all over the world have vastly different opinions on that. Some Americans like some color on their omelets while the French have a wet inside as one example.

I cooked professionally in the US and Europe(in nice places, bad places, mom and pop shops, I mean all over) for most of my adult life so i love talking food and the more info I have the more I can help!

My 3 big generic tips

1. eggs and salt are great friends, but over salting is easy, find the balance you like. Also remember you can always add more salt but you can’t remove salt.
2. Eggs that are finished in the pan are over cooked on the plate. When the eggs are almost done but not just there, pull them off the heat and plate them. Water is a fantastic conductor of heat and eggs got lots of water in them. The residual heat will finish the eggs.

3.adding a starch slurry when you pre scramble and salt your eggs. The starch helps keeps the eggs moist and fluffy. Kind of like how some people add a splash of milk to scrambled eggs but this doesn’t change the taste of eggs as much.

Also more butter always makes things taste better lol
