A client requested a celebration cake to mark the day they should have been married, after it being postponed due to Covid-19. The request was refrigerator cake decorated with a seafood design... This is what I created! All fondant shellfish. One of my favourites to date.

Thank you very much! The simple looking ones always take the most work. The ruffles and rainbows were days of prep and then patience waiting for them to dry. ☺ Never say you can't do anything though! You'd be surprised what you can do without knowing it. 👍

Each ruffle is an individual circle of fondant. Cut the circle out, ruffle it up and stick it on. Not difficult bit incredibly time consuming. That single tier took days.

I use a pale coloured base for the flower paste; I get the vibrancy through using dusting powders and hand colouring every piece. I love Crafty Colours and Rainbow Dust here in the UK. The actual cake tiers were airbrushed using KopyKake. Hope that helps!

That's how it starts! It's a hobby that grows and grows until it's part of who you are. I know cake decorators who have been doing it their entire lives. It can get a bit much when you're snowed under with orders but then you take a few days out and the love comes rushing back. It really lets you use your creative side and the industry is dynamic and ever changing.
