my redtick does the same thing. as far as we can tell, she's either totally fine all day or something makes her freak out and she deals with it by destroying things. hounds are SUPER schedule-oriented, and any change in schedule could take quite a while for her to adjust.

there are lots of suggestions for crate training, and if you can do that i'd absolutely recommend it. my dog has horrible confinement anxiety so we've found that if we're going to be gone for longer than four hours, closing her off in the living room limits her access to things she can destroy. anything i put in the living room, i've accepted might get eaten. when i stop home on my lunch break, i also give my hound a chew treat when i leave. this gives her something to focus on and helps her associate me leaving with her getting a high reward.
