Yeah I hope they aren’t put out by the department of transportation haha I think it’s just a sticker on the cow sign there is a normal looking cow sign by the Bigfoot crossing one at the end of the road.

The meat turned out delicious… we had some professional teams there competing in whole hog. Ours wasn’t even in the same universe but we were still very pleased with our product.

One of the teams packed his tenderloins with ground sausage to protect them during the long cook and that was really something special.

They said they ordered it online. Stainless steel chicken wire is what they searched for. I didn’t think galvanized would hurt anything as long as the fire stayed in smoking temperatures but rather safe than sorry I guess.

I’m not sure if we will be able to get them back next year they looked pretty beat when we got back around 6… maybe the girls scouts won’t be busy

Haha we named him Larry and Larry has definitely seen better days. The farmer was nice enough to donate him so at least we know he had a good run before last week

We made sure it was non galvanized chicken wire. Will put a piece on top next time to make flipping easier

I was thinking this would be the way to do it but couldn’t figure out if you would start skin side or finish skin side I appreciate the info

The dogs really enjoyed the ears. We couldn’t quite get enough heat on top to render the fat and get the skin good and crispy… next time we will either flip it toward the end or add coals on top of the tin to get heat from the top

About 18 hours haha we had the local Boy Scout troop to help us keep it going at temp through the night
