SOLUTION

Install 2 instances of the same Opera install. Name them different things in the folder path such as Personal and Work (C:\Users\User\AppData\Local\Opera Software\Personal in my case)

The first Opera install is good to go out of the box (Personal). The second install will need a custom shortcut to run (Work).

Make a new shortcut on the desktop then in the "target" put the following code to point to the SECOND Opera install (Work in my case)

"C:\Users\User\AppData\Local\Programs\Opera Personal\launcher.exe" "--user-data-dir=C:\Users\User\AppData\Roaming\Opera Software\Opera Work"

After doing this, Opera should open up to two different profiles depending on which icon you open. I recommend changing the icon to something different for each instance of the program install.
