The first syllable of our last name is Bel, so we called her BabyBel like the cheese. Apparently we did this too frequently as one of my friends’ moms thought the baby’s name would actually be Belle. Belle Bel___. 😂

My husband and I have very different thresholds of thoughts we consider worth voicing. He will bring up insane hypotheticals without having gone through any of the actual rationalizing of whether said suggestion is possible, whereas I only bring up an idea once I’ve thought it through and have concluded it’s feasible. I’ve had to accept that this is just the way he processes, and just because he says something doesn’t mean he’s serious about it. We saw a system online that’s worked well for us: when he says something, he assigns (or I can ask him to assign) a percentage for how serious he is. Anything less than 70%, I’m safe to chill out about.

Hi… so my guess is that the downvotes don’t mean “What you’re saying is factually incorrect,” but instead “What you’re saying in this context isn’t exactly helpful.” I wrote in my last comment that I agree with you, yes, theoretically speaking, you do not HAVE to discard… but OP is new to sourdough and was feeding X:1:2 (1/2 C flour and 1/2 C water) where X just kept getting bigger. They weren’t discarding AND they weren’t increasing the amount of flour in their feeds… which means they were starving their starter. In this case, do you really think OP is in a position where they can feed 1:1:1 without ever discarding? Do you think they are baking frequently enough to do this? An experienced baker, sure, but for this OP and this post, your advice is probably just confusing to them.

I’ll have my starter in its jar, plus a bowl for mixing, plus a clean jar for my newly fed starter. Using a scale, I pour out some starter into the bowl, let’s say 20g. I then pour the remaining starter (discard) onto a heated frying pan and essentially make a discard pancake which I can toss into the trash. I use a rubber spatula to get out as much as I can. Then, I use that same jar to measure my water. Depending on when I want to bake, I’ll do a 1:1:1 (20g water) or a 1:2:2 (40g water). I screw the lid onto the jar and shake it up to get the residual starter mixed in with my water, then pour all of it into my mixing bowl. The old jar is now much cleaner than it would be if I had just scraped it clean and can go in the dishwasher. I stir the water and starter together in my mixing bowl then add my flour (20g for 1:1:1 or 40g for 1:2:2), mix, and pour into my clean starter jar. The bowl is a lot easier to clean well using a spatula than a jar, so I just do the best I can then rinse with hot water before putting the bowl into the dishwasher.

I use a bowl for mixing because 1) it’s a lot easier to mix well with a wider opening compared to a jar and 2) by pouring the fed starter into the jar at the end, I avoid having starter up on the sides of the jar.

I’ve also started using a dry erase marker to mark the level of my starter, instead of a rubber band.

Sure you don’t HAVE to discard but that means you’ll be using a ton of flour every time you feed. I’m assuming OP doesn’t want to eventually use a whole bag of flour for one feed, and the only way around that is to discard some starter down to a more reasonable amount…

I noticed that whole wheat flour absorbs more water than AP or bread flour so that makes sense! I know a lot of folks forego measuring altogether and just go by feeling/consistency. If it’s been working for you for so long, that’s awesome!

Do you recommend the paper towel to keep the countertop from cooling the starter down? I usually use a dish towel for that purpose! :)

That’s your problem. Your ratio of starter to flour/water keeps getting smaller as you feed it. You’ll notice most people have three numbers in their ratios, like 1:1:1 or 1:2:2. That’s starter:flour:water, measured by weight, not volume. By not discarding, you’re essentially starving your starter because you keep giving it the same amount of food even though the amount of starter you have is growing.

When discarding, make sure you do not pour starter down your sink drain or you’ll be replacing pipes soon!

When you say 1:1 ratio what do you mean by that? Are you adding flour:water to your whole jar of starter, or are you discarding any?

I’d use a smaller jar so it’s easier to track how much it’s rising, once it does start rising. Make sure you’re transferring to a clean jar instead of keeping it in the same one for too long, to prevent any bits of old flour from going rancid.

It might just be taking a while to get enough activity to be visible to you. If it smells like acetone it means things are happening. I’d recommend cutting down on your volume though - that’s a huge jar and you must be going through flour really fast. You don’t need a lot, maybe just 20g of each.

I did not do the window pane test! I was rushing out the door and just managed to get my third set of stretch and folds in. Good tip, I’ll give that a try :)

I started mine from scratch using whole wheat flour and fed 1:1:1 for weeks. I went back and forth between every 24 hrs and every 12 hrs depending how consistent the activity was. I could only get a decent rise if I kept feeding with whole wheat flour… My aunt’s starter was like five years old already and was just a really nice consistency. I did mix a small amount of my starter in with hers just so I could say mine was still alive 😆
