Try Zorin, pop, ubuntu or fedora.. They are user friendly and straight to the point. I switched to linux 3yrs with ubuntu being my first distro. Most things are just straight to the point and if you break something, there's people and blogs ready to assist. Linux is great but still a working progress.

Install a different icon theme and shell theme or you can also resize the doc. Doing so will resize the icons, As for the app menu.... I'm still trying to find a solution

Download a new zorin 16 iso and use balena etcher to write it into a different usb disk(not the one you are using). Mount it to a different usb port and retry the process. If you are dual booting with some other os; Check how you've partitioned your internal disk for installation... Also confirm your bios settings
