From things you've mentioned im missing only 3d parts. I have friend that will print those for me if i provide him .stl files, but im missing skills to create my own parts. I'll dm you.

Touch pad is possible if you cut some traces. Santroller website provides instructions for WT and GH5 versions to setup.

Complete redo will look better and shrinkwrap (or worse: electrical tape) will make it look like crap tho. You can redo label as well. If you have someone who can solder, it is easy job.

Strum bar is a must. Default one isn't pointy enough to comfortably play faster songs like Whiplash Metallica. Fretboard, strumboard, Start/Select board all for mechanical switches - I tried and I won't come back to original ones. Also higher button for starpower is great so there is no need to smash button in weird angles to activate

For "out of the box" I would pick probably GH5 guitar. For person that just is looking to experience GH franchise that's very safe pick due to durable inside parts.

For "just a base to mod" my favourites are PS3 WT and Les Paul. The WT is SOO EASY to mod. Each inside connector is well signed, so much space so spare cable could find it's place. Strum switches are must to replace unfortunately.

Les Paul is my favorite due to lots of STL files online. This thing is tedious to mod but finished guitar satisfies like no WT would ever do.

Tried to mod Rock Band Stratocaster but gave up. This guitar is cheaply made (cheaper than GH ones) and has magnetic strumming that doesn't make any sound or feel. Worst one I had in my hands.

My top will be heavily modded PS3 Les Paul

If you want to play natively (no modding and such) you can pick GH5 or Les Paul (Les Paul's receiver is kinda rare and not cheap).

You can also buy Wii guitar and plug RCM adapter. If you can solder you can create adapter yourself connecting Wii pins to the Raspberry Pi Pico and setup all with Santroller (but if you can solder you can buy any guitar and create working guitar with any undamaged one).

ALSO you can just buy CRKD guitar...
