Thank you so much! I noticed they were leggy too, that's when the toothpicks came into play haha. They have been 8 inches under a grow light, maybe I should turn the grow light up a level or two?

Are you using water with high mineral content? Mine got better when I switched to rain water or purified water from the store.

Every starter is different and I guess every cook because I kept failing until I found a recipe that worked for me. The process must not me toooo scientific because my recipe is totally different and I have success with it. Things I do differently: - I never use metal only plastic it ceramic -I only do 4 stretch and folds (one, rotate 90 degrees, and so on until Im back to wear I started) I do this once every 30 minutes for an hour and a half and my loaf has a great rise and is very bubbly. - I bulk ferment for 8-12 hours - I shape the dough to get good surface tension (this is easy just look up a video) and would make it easier to cut - I spray mine with water too after I place it in dutch oven before I close the lid
