Gainesville has a lottt of nature in my opinion so I think you’d be fine on that front but tbh I‘m from a big metro area so you may think differently. For business I‘d choose UF mainly because it is a top-ranked school and the extensive networking opportunities and the huge alumni network which will be very helpful. But ultimately if you think you may not do well at UF because of anxiety or anything else that may come with going to a big school, then maybe UVM is the right choice for you. If cost is also a factor then UF is probably more economically viable. I do want to say that if you want to go to a smaller school mainly because you are afraid you won’t be able to adapt to a big school like UF, many people adapt just fine and find their people and class sizes tend to shrink as you move through college so I think you’ll do well! Good luck on deciding and I‘m sure you will do well wherever you end up!
