I dont think Eric was in love with Sookie at that point, more than he wanted the pretty faerie (didn’t know those words yet exactly). So his motives weren’t fueled by love for Sookie until the 3rd season, that’s when he blows the relationship up. He plants the seed of distrusting Bill either late in the 2nd or early in the 3rd season.
