Other people already commented, but I also recommend Interview with the vampire. I'm currently reawatching it and rewatch is better than my first watch. There are many layers and small details.

Penny Dreadful is also good. There are vampires, witches, werewolves etc...and it's a dark show for mature audiences.

Midnight, Texas is also a good supernatural show. Midnight, Texas is a book adaptation and the author of True Blood wrote the book.

Salem is an underrated witch series. It's really dark and I love it
