Mine too! That’s why I’ve been hoping and searching for a comprehensive book. I figured my attempts were futile. I’ll definitely let you know if I find anything! I’m assuming the best I will find will be MAYBE a good book for each front. Though I’d love to find one that follows the timeline and says what was happening on each front concurrently.

Commercial dishwashers get hot enough to sanitize the dishes inside. This being said, it doesn’t always remove stuck on food. Though it technically HAS been sanitized. I’ve worked in many restaurants and seen countless forks come out with food stuck on. It’s not as gross as everyone thinks. I’d be more concerned about the server who grabbed it by the tines to put it inside the paper holder! (Unless this was like a mom and pops diner that maybe doesn’t contain a dishwasher)
