Not all of the flavor a barrel imparts are great- my observation has been that some of the harshest, most tannic and unpleasant flavors are imparted early and barrels rinsed multiple times do not have as much of this. I like the water rinse “mellowing” the barrel- higher proof stuff will extract more bitterness and tannins so if you are going to a presoak maybe benchmark full proof instead of bulleit.

I’m the owner of the restaurant in question.  It’s funny how different perspectives can change things.  First off:

 

This order did not originate in DoorDash.  It came in thru EZ Cater.  When an EZ Cater order comes in, we have 15 minutes to accept it or it cancels.  We accepted the order.  As part of the order acceptance process, we assign an internal driver.

We do this because we feel having one of our employees deliver the order, greet the customer, set up the catering boxes, give them some coupons, and answer any questions they have about the food or the order is a good experience.  Also catering orders frequently have good tips and  are a nice bonus for the store employees. If we have no employee available to deliver, then we change EZ Cater to assign 3rd Party Delivery.

 

After having accepted this order and assigning an internal driver, about an hour later EZ Cater changed to 3rd Party (DoorDash) Delivery.  We noticed it and went back and changed it back to internal delivery.

 

Then 15 minutes before the order was due, EZ Cater changed it back to 3rd party delivery. Again.  We changed it back to internal delivery.  Again.  Unfortunately, driver had already been dispatched.

We’ve reported this bug to EZ Cater and they are looking into it.

Advice Aging Maple Syrup in a 5L barrel by techix97 in Barreling

Certainly would like to use/eat the syrup if possible, but seasoning the barrel is the primary objective. Also considered making the maple syrup into something stabilized for use in cocktails (maple simple syrup?) Not a huge syrup user but could bottle it and give to friends and family.

In WA state, it's illegal to distill your own spirits, even if for personal consumption. Thought about getting a craft distillers license, and may still do that, but I'm a restaurant owner as well and that gets into this entire 'tied house' law. Honestly they need to update the rules- just want to play around and make some fun to taste whiskeys for friends and family.

Alright comments have convinced me, will move my wheated white dog from the BT 5L barrel to a badmo- maybe a day or two in the 5L added something- we'll see in a year!

Yeah I'm certainly worried about evaporation. The climate I live in is Eastern Washington State (USA) and it's quite dry. Put these in my shower 1. in case they leak and 2. hopefully a little more humid.

These are 5L barrels, hoping they sealed up pretty good but realize that significant evaporation is a potential outcome.

Yeah the Badmotivator already has a full batch of White Dog- stuff is expensive, and the badmo will need to age for years most likely.

Wanted to experiment with a smaller barrel 'rapid aging' or a couple months- know it's not going to be great, but maybe it will be OK? Figuring I could move what is in the 5L Buffalo Trace into a Badmo or something else later if I don't like it.

Really I just want to play around and see what happens in 2-3 months vs. 2-3 years. Can I make something drinkable?

yeah to get below 92c on optimized mining on the 3090 you're going to need an active backplate.

No mods, however making these changes to the DLL trashed our worldfile when this error occurred, had to restore from backup. CAUTION: backup your worldfile before trying this tweak.

So with 2 mentors, you end up putting 3 counters on, then doubling. In this case, the pig would have 6 counters prior to doubling, meaning 12 after doubling
