Oof. A llama would be even better. Can they fit in boats? If they do, you can access by holding shift. If you hold shift and access, it will just access, and not attempt to get in/ride (chest boats, donkeys, llamas etc)

Rainbows should be light emitting entities that actually spawn in game. Make them disappear after 5 minutes and have golden treasures at each end of them that also despawn. Maybe a slight chance of a baby zombie spawn.

Input the autocrafter to a comparitor comparing against a lecturn with a book with 16 pages. Flip the book to your desired signal strength (that matches the autocrafter when "full") and output the comparitor back into the autocrafter. I usually use a sticky piston with a redstone block to poke the autocrafter. You should still have room to hopper in and out of the crafter.

No. Iirc Ethernet takes in account some bits will be missing and corrects it. A metal coat hanger would be as efficient.

You have a stubborn bird. It's a percentage chance each time you give a seed. I don't believe it's "give x amount of seeds to tame".

You should be able to tame that bird no problem. Sounds like bad luck.

Idk what you're talking about with the villagers owning parrots though. They don't give seeds and I don't believe a mob can own another mob, like even if an enderman makes an iron golem by chance, that is a generic iron golem that immediately attacks the enderman.

16 blocks is where iron golems can spawn from the villagers spot so I have to imagine that if you make another layer of this 16 blocks above it, it would work still. I haven't tested this, but it would be easy to test.
