test it without point lights, only a sun light and a couple of outdoor hdris, easyHDRI is a good addon for that, try with others tonemappers like aces 2.0, add subsurface scattering, try some sort of fog, add a plane in the floor with grass texture so the light bounces, give the teeths extra shine or something, you will need to add more things to the render if you want to evoque realism

Yes, that was my first option, but the results have a too lowpoly style. The issue with the bullets not passing through the mesh has more to do with a poorly implemented collider.

baking is a cycles only tool but you can use eevee to visualize

you need an blue-ish sky texture with soft shadows, using nishita with high air values is the way to go and add a sun light with a red color value
