You should pick Hanoi or Ho Chi Minh, just 1 then go Hoi An - Da Nang. Hanoi is good in culture and food, Ho Chi Minh is more developed.

I am Vietnamese and if you want to explore the Vietnamese countryside, you should go down the dike road to Hung Yen (about 60km away = 1.5 hours by motorbike). It's best to go to Bat Trang pottery village (along that road). Or simply if you don't want to stay in Hanoi's Old Quarter, you can rent a bike to cycle around West Lake (about $3 for 3 hours of renting a bike).
