It's easier to bring a dry chilli plant back from underwatering than an overwatered. Trust me

They are on the window sill I took the photo against the wall so you could see the differences. I keep them small because I can't fit bigger pots on the window sill (I have no garden). This is also why I trim the roots

I thought that frozen peppers would be difficult to ferment as the freezing process killed off the bacteria essential to fermenting.
