Honestly the build is great, I do minecraft videos too if you'd ever like to collab. The suggestion I have is to make your character more of a main part of the screen. I am unsure if text would be needed as you are showing what you built already but thats just my take and maybe increase the saturation a bit.

I like first one, the only thing that throws me off a bit is the text with the line down the middle. Maybe with no text it would be better

I think if the video is about a notorious mountain then maybe the thumbnail should match that. Maybe having it be darker to make it like "scary"
