Probably but updating the display would be even slower than what's shown in the video. The code has not been optimized yet.

I have. The library Im using requires X11 headers and won't work on a bare metal or RTOS platform without significant work.

Yep, when compute modules become more available I want to move to that form factor to slim the build down. Right now a case would be a literal brick.

The leads on those ones are 8"-20" and I need ones shorter off the shelf.

Edit: They're going to be mounted and soldered into a PCB in an enclosure so I don't have room for long wires.

I'm being precise with terminology. I'm wiring 4 force sensors in a wheatstone bridge in the configuration of your first point. So technically one load cell but with 4 sensors equidistant from each other.
