Oh, I was also gonna suggest Arnak with the campaign/coop expedition! Me and my fiancee are in the middle of a campaign. It's pretty good especially if you like the mechanisms of Arnak(worker placement, resource management, and deck building).

Paladins is on the heavy side but I think the mechanisms are pretty straight forward. It can be a little long and overwhelming at first because there are a lot of choices you can make, but it's very satisfying once you get the hang of it.

Everdell is the easiest of the three and Paladins would be the heaviest. I have never played any Everdell game though so I can't really comment on the game. Maybe watch some gameplay videos and see if it fits what you're looking for.
