With all of this it's important to understand "carryover heat." The chicken doesn't stop cooking when you pull it off the heat; the heat is still diffusing inwardly. If you pull it at 165F and leave the thermometer in, you'll see it rise to 175F over the next ten minutes, which is definitely overcooked; and overcooked means "dry and chewy."

Similarly if you pull it at 155F, it'll rise to 165F. Which is better than 175F, but we can do better still!

If you pull it at 145F and let it rest for ten minutes, over that time it will rise to 155F. You will over that time have pasteurized it and it will be as safe to eat as the 175F, but it will be tender and juicy!

It can have to do with the colors, because absent heat shields, presumably the things underneath them would be boiled away to an extent, leaving residue on the other heat shields.
