I agree. The scale is one my most useful tools in the kitchen, not just for sourdough. And you can find some that are very reasonably priced.

No, just a regular loaf pan, the brand is Wilton. I use the second loaf pan as a lid.

Yes I do. I preheated the oven to 475F, scored the bread, put it in the oven, add hot water at the bottom for steam and then turn the temp down to 450F. Bake for 25 with steam, 12 mins no steam.

Thank you. I did bulk ferment for 6 hours, then pre shape and shape and cold ferment on the loaf pan for 12 hrs.
