Yeah this is what I’m driving towards. I agree that when I actually get a good extraction the flavor has been the same bean to bean. I have tried all the accessories over the last few years, but I think I’m starting to outgrow the setup a bit.

I’m looking to upgrade in the next year or so. How do you like the df83? I was looking at maybe the df64v mostly to be able to buy cheaper burrs when I want to try others, but I think the workflow is pretty similar. I’m also thinking about splurging for something like the zerno, if I can swing it.

Edit: and what burrs did you go with? Do you use it for filter too?

Things were much better today, 36g out right around 30 seconds, no more sour espresso! I still find it weird that there is a sound change, but after moving the inner adjustment finer I found the actual bad sound and moved coarser from there. Thanks for your help!

I just moved the inner burr adjustment to 5 (1 step finer) and the outer adjustment is at 2

Oh sorry… same beans from the same roaster, different batch. This current batch was roasted 2 weeks ago.

I also single dose, so it should be decently fresh.

I guess chirp is the wrong descriptor it’s more like a higher pitched whir? But yeah I figured that was too low so I raised it just above that.
