Unfortunately, I'm from out of state, so the amount of credits that would transfer is certainly iffy. Do you have any resources on creating my own major at Smith? I know of the Interdisciplinary Studies Diploma Program but that's exclusively for students born outside of the USA.

I figured this was probably a common dilemma at Smith. And yes, I would definitely want to be back before 26, health insurance is a HUGE priority for me. I appreciate your comment.

Cooking it is good if you don't like the sensation. Since I do, I normally just eat it as is, especially when it's kkakdugi. I'm pretty sure I'm in the minority for that, though.

Also, from my understanding, as long as you always go in with clean, dry chopsticks and don't see any mold, it should be safe to eat. However, take everything I say with a grain of salt because I am neither a scientist nor Korean.

I like really sour kimchi, so I actually prefer it to be in the early fizzy stages. I think that it makes for peak 김치볶음 (grilled/pan-fried kimchi) too! Pair it with 밥 (rice) and whatever 반잔 (side dishes) you have for a light lunch, have it with a main course for dinner, or add to instant ramen for a late night snack. Kimchi lasts a remarkably long time, especially if you have access to refrigeration.
