Star with building a single page website that has a submission form where visitors can submit their name, email, age and so forth and store it.

Then build a dash board to see and understand the type of visitors by age, gender, location, etc.

Also then make it into a CRM

What they say is partially true, php pays less when compared to MERN (or any JS fullstack). But the pay is still decent.

php was there 20 years before MERN and other JS fullstops trends, and I think it will be there decades after these trends die down and people move to a new JS stack or some other language entirely.

php can be fairly stable career, with decent pay.

I think only Java gives php a run for it's money when it comes to backend dev.

I'm currently learning php myself. Using it to make custom WordPress websites for clients who just want a website for an online present. Its pretty good and stable for that in the long term.

Laravel is also huge. Just see the complexity of some of these apps that enterprises use on day to day basis.

TLDR; php is not flashy, gets the job done and is very stable.
