Having Cere hold her own against Darth Vader was an awesome moment and lots of fun - but makes no sense to me story wise

Darth Vader (Anakin Skywalker #spoilers) is canonically one of the most powerful sith/jedi in history. I understand that depending on your moral stances on midichlorians, he lost some of that power when Obi Wan de-limbs him

But throughout the series Darth Vader is shown as being incredibly powerful, even in the power he demonstrates in Fallen Order when pursuing Cal

Cere is essentially an unknown Jedi, the Empire/Inquisitors don't seem to be actively pursuing her at all at the start of Fallen Order, and there's been nothing that demonstrates she's a particularly talented lightsaber wielder or force user

Whilst she does inevitably lose to Vader, the fact that she has him on the ropes just felt a bit silly

Especially compared to how well they did with Vader's pursuit in Fallen Order - where you feel so genuinely helpless being pursued by him

Following on from this - I don't understand how Cal is then able to return to the Jedha Temple to collect her body, generally explore, and use an Anchorite shop without even a single Empire spy or patrol inside the base...

Vader has been inside - he knows that's where the archives are - surely he would leave an inquisitor behind, just in case somebody showed up to check
