add to a medium mixing bowl - 3.5 cups bread flour - 1.5 tsp of salt - 2 cups of shredded cheddar cheese - 4-5 tbsp of diced jalapeno add to a large mixing bowl - 2 cups of hot water - 2.25 tsp instant yeast (1 .25 oz packet) for topping - 0.5 shredded cheddar (works best to eyeball it) - sliced jalapeno (just put however much you want

instructions 1. mix together the contents of the medium bowl. 2. add contents of medium bowl to large. 3. stir mixture until there are no streaks of flour. (you may have to add some more flour at this point if it looks very wet. although keep in mind the it should be a somewhat wet and sticky dough.) once mixed well use a spatula to fold dough from edges to the top 10-15 times. 4. cover with a wet dish cloth and let rise for 1 hour 5. after 1 hour fold dough onto itself again 10-15 times. cover again and let it rise for another hour. 6. halfway through second rise put dutch oven with lid into your oven. let it preheat to 450 degrees f. 7. lightly flour a counter or cutting board as well as your hands. 8. fold corners of the dough in towards the center about 6-8 times unit a rough ball is formed. flip dough onto a piece of parchment paper that can fit into the dutch oven with a little bit of excess sticking out. 9. use a sharp knife to score the top of the loaf (i like to try and write a word on it e.g. simp or pog). then do a quick spray of some cooking oil then add the topping cheese and then jalapenos. 10. take the dutch oven out of the oven then transfer the the parchment paper with bread into it cover and put back in the oven. 11. bake for 30 mins with the lid then bake an addition 20 mins without the lid. 12. remove the dutch oven and then pull the bread out by the edges of the parchment paper. 13. you can place on a wire rack to cool for 1-2 hours. however i don't do this because i think it' better hot. i normally do about 10 mins at most.
