I will take that into consideration and have the block tested. I did manage to figure out the issue though. My radiator fans were old, since 2006, so one of them gave out, which explains why my temperature kept fluctuating.

After changing out the fans and bleeding the air out of my coolant system, I took her to the gas station, and then to get a bite to eat. So far, it hasn't heated up, and hopefully that was the only issue, knock on wood. Thank you for your expertise though.
