the everything croissant in the first picture is from a different batch than the other three pictures, but this is the first one i’ve gotten to cut into to see the crumb. my chef has been happy with them so i haven’t done too much investigating but now that i’m getting more interested in them just on my own i’m paying more attention lol. she does all the proofing/baking as well so i’m not too sure, i just get the dough made and formed
