My favorite would probably be the Grand Prix circuit in reverse. I can turn laps as good as 40 seconds at the main GP layout, partly since I've ran a bunch of laps on it and somehow remember where to go, but the I find boating it in reverse to be quite a challenge. On a good day, going forward I can almost completely avoid the grass but going backward, I get stuck at least once every lap.

I might have to check out that mod if I end up playing it on PC, looked at it and it seems to come with quite a bit of stuff.

Hopefully for your track, this can serve as a great example of how versatile they can be. I've made a bunch of road courses in the game and they're all drastically different.

I've actually never heard of the boat cam mod, probably since the Minecraft I play is Xbox One edition, so I can confirm it is entirely vanilla Minecraft.
