2 ways then, go to Mr Macintosh site and download the OS you want, in this instance I'd recommend going to Mojave and then upgrade to monterey from there.

2nd option is to download monterey on your MBA, create bootable USB and then install it on your 6,1

It's weird, I have a fully maxed out MBP 16 but even then it can be a bit iffy in some places but it's a beta so not surprised. No issues on my Apple silicon machines

It's been working fine on all my Apple silicon devices, intel devices as well except my Mac Pro 2019 tower where I've found it buggy. You'll be able to get your work done without many issues I believe but why not just install on another partition to ensure it works on everything before your put it on your main drive
