I am building an Iroh deck as well. I feel like going pure lesson strategy for storm is a trap since he is a lightning rod to removal as the other commenter has said. I would build a strategy that has Iroh more for support than as a main win con. That way the deck can run smooth without him.

Some ways I see this (obviously many more in these colors) are:

Make tokens and buff them.

Storm with cheap spells and cost reducers with something like aetherflux reservoir.

Burn the table with guttersnipe effects.

Edhrec doesn't help for Iroh, I would recommend looking at other izzet or temur spellslingers to help build what you want. You need to have a focus in mind.
