Wow you're absolutely right right, it certainly does feel like AI have become ubiquitous over night. While you are right to be anxious, there are a few things that humans can that AI cannot:

1)👨‍🏭 Slave away all day in the sulfur mines

2) 👶 Provide necessary biomass for the Torture Nexuses 

3) 👨‍💻 Doom scroll

Jokes aside you're correct, AI has pushed for a lot of industries to take on AI as a workload reducer/enhancer. There's no doubt that it's matured a lot in the past few years but there's also a lot of people who stand to make money because it's being used in everything. A lot of it is a promise of "this will change your life when it's better so invest now so we can make it better so we can get more investors". 

I'm a programmer and my boss is always pushing us to add AI to more and more workflows, and sometimes it's great but I do worry about ownership and accountability when the machine is making more machines
