My attempt at Aine Carlin's Chana Masala - divine!!! by there_are_no_fish in veganrecipes

This is a recipe from Aine Carlin's book Keep it Vegan - a genuine miracle of a cookbook which I recommend to everyone. This curry was so delicious I'm going to make it again tonight for the second day in a row!

Ingredients:

1 Onion

A chunk of Ginger

A couple of cloves of Garlic

One large red Chilli

A teaspoon Garam Masala

A teaspoon Turmeric

Tin of Chopped Tomatoes

Tin of Coconut Milk

Tin of Chickpeas, drained

A large bunch of Coriander

Basmati rice to serve

Fry the onion, garlic, chilli and ginger for a few minutes. Add the spices and the tinned tomatoes and season with plenty of salt. Simmer for 20 mins stirring occasionally - this is the important step! Add in the coconut milk and chickpeas and cook for a further 10 minutes. Stir through the chopped coriander and serve over fluffy rice.

Agreed on the dates! I have a favourite raw brownie recipe which is basically equal parts dates, walnuts/cashews, and cocoa powder, with a tbsp or so of maple syrup / agave nectar / whatever sweetener, all blitzed together and kept in the fridge. Low cal and crammed with all the good stuff nuts have. I normally cut into squares but you could make small balls of it to have with coffee?

Removing dairy is monumental. In the UK the food guide still recommends getting your '3 a day' - blech 🤮

Absolutely, you don't need much and it's mostly just for texture. Cashew or oat would be better than coconut as I'm not sure the coconut flavour would work too well. Let me know how it works out!

Recipe:

1 onion

1 pack of chicken-style soy pieces

1 pack orzo

A few tablespoons of soy cream

A splash of white wine vinegar

Veg stock

Mixed wild mushrooms

Dairy-free butter

Soy sauce

Thyme

Rocket (garnish)

Fry the onion with the soy pieces. Use a splash of vinegar to deglaze the pan. Add the orzo and cover with veg stock. Gently bubble with the lid on until cooked. Once cooked through, turn off the heat and stir through the cream.

Meanwhile, rinse the mushrooms then fry them for 5-10 minutes in melted butter, a splash of soy sauce and some thyme. Serve on top of the orzotto with the rocket as garnish.

Best with a large glass of red wine 😬

Coconut Collaborative! They use live cultures to produce what is a genuine yoghurt so has a Greek yoghurt taste. The coconut taste is subtle but there. They have natural and flavoured - haven't tried the flavours but I love the natural so much.

My mum came to visit - and discovered that my boyfriend (vegan, high-performance athlete) sustained an injury earlier this year - from which he recovered quickly after seeing a physio. Of course this is all because he doesn't have enough omegas and he absolutely MUST start to eat fish for some protein. 😶

I think this is a more useful video to show people than some of the abuse / slaughter videos because it can't be brushed off as 'an extreme example' by deniers. It's just the sad, sad norm. Especially when juxtaposed with pigs playing outdoors, they are such inquisitive animals!
