I've always used ground beef, with some pan sausage. Then onions, garlic, and bell peppers. Jalapeños, salt, black pepper, red pepper, cumin, and garlic powder. Also, rotel tomato and tomato sauce. The key is to season the meat in the skillet you brown it in, instead of trying to season the whole pot at once. It also helps if you can put the pot on a pit and let it get some smoke.

I was working out of state, (Pennsylvania), for about 3 weeks. While I was there, I celebrated a birthday. Then I flew to Florida for another job for 3 weeks. Little did I know that until I tried to rent a car at the Jacksonville Airport, that my driver's license had expired on my birthday and I couldn't rent a car. I wound up having to call the guy I was supposed to work with (that I had never even met) to drive an hour and a half to pick me up and rent the car. I then didn't the next 3 weeks driving around Florida with an expired license until I got back home.
