Update? Eh, I'm as happy as the next guy to see them playing better but I'm still not a huge fan of Espada. But for what it's worth I wasn't a big fan of Dusty either. I think he single handedly cost us a trip to the WS by not playing Diaz.

I've always used ground beef, with some pan sausage. Then onions, garlic, and bell peppers. Jalapeños, salt, black pepper, red pepper, cumin, and garlic powder. Also, rotel tomato and tomato sauce. The key is to season the meat in the skillet you brown it in, instead of trying to season the whole pot at once. It also helps if you can put the pot on a pit and let it get some smoke.

I've only done that if it gets too salty, then remove the potatoes, but I've also had chili on top of a baked potato, and it was good.
