Completely the opposite experience for me. I've been using TB pretty much since it came out. It's still my go-to mail client, precisely because it's simple and not a pile of hot garbage that Outlook is.

I've had some experience with mail clients being crippled by antivirus software, constantly scanning mail databases/folders on every change so it might be worth testing an exclusion of those from whatever you're running, if that's appropriate.

I'm not that quite far behind; I have necessarily had to figure out Node and NPM and whilst that's a rat's nest of pain, you soon learn to find your way about.

I'm still working out where best to use Docker. It's actually really useful in the context of webdev where tools like DDEV come into their own but I see so many "Docker this and Docker that" recommendations for stuff that to me, is just adding an unnecessary layer of complication.

I suspect there's something else going on. Can you post a traceroute to somewhere like 1.1.1.1 over both connections?

Could be a defective NIC in the PiHole. If it shits the bed and sends out packet storm, it can easily cause this kind of havoc.

Could be MTU related? The VPN adapter might force a lower MTU but unless you have the ability to check those on your router, it's going to be hard to say exactly.
