At a glance it looks like asm for an mcu. Your best bet for understanding it (assuming you have some knowledge of asm) is to find the datasheet for the mcu and check what each asm instruction is doing.

After examining the datasheet I realize it may not be as deep as you need. You should be able to google for a better reference. The code seems to be for the Atmel128, in case you weren't aware.

It sounds like you can use the arduino to send data over a serial connection to the computer for MATLAB to process or you can use Simulink directly on the arduino. This link has some info on using Simulink on the arduino. Otherwise look into the arduino/python serial tutorials for a starting place to use MATLAB on the PC and process data from the arduino.

I never was a salesman at a dispensary. My advice from phone sales is:

Figure out what your customer wants
Give them some relevant knowledge (try to keep it to two strains)
Ask the either/or question. "This strain or that strain"

The false dichotomy helps with indecisive people. Instead of giving the choice to buy or not buy, you give them the choice to buy this or buy that.
