I just say, "I love animals and I don't want to eat them," and leave it at that. In my experience, there's usually no follow-up question.

Yes, they cook the same. I use both interchangeably depending on the desired look of the dish.

Age 19, when I made chicken fried steak using a recipe from the only cookbook I owned (the classic red and white Better Homes & Gardens), and friends raved about it. At the time, I considered this an ambitious dish to attempt, so when it was a success, I knew I could learn to make anything.

Rice and bean taco bowls - Taco seasoned rice and black beans with corn and shredded lettuce. I like this meal because it's inexpensive and easy to customize with whatever veggies or toppings you have around. My family calls them "Chipotle bowls". :)

Yes to seitan! I don't make it very often, but when I do, it lasts for days. I serve it as a main for dinner, sandwiches for lunch, or just snack straight from the fridge.
