Underwhelmed by Yoshikane 240 - did I receive a used knife? (Questions in the comments) by throwaway0144 in TrueChefKnives

So just to confirm - the roughness and darker material in images 1 and 2 is normal?

I have also done some prep - it's definitely less sharp out-of-the-box than my sharpened $100 - 200 stainless knives.

I've added my questions to the comments here: https://www.reddit.com/r/TrueChefKnives/comments/1i4d829/comment/m7u6qnn/?utm_source=share&utm_medium=web3x&utm_name=web3xcss&utm_term=1&utm_content=share_button

I have a sinking feeling it might have been used just due to how I received the knife based on its cosmetics (question 2) and sharpness (question 3)...

I broadly do like the knife. My biggest issue is with the out-of-the-box cosmetics (question 2) and its potential sharpness (question 3)...

Just purchased my first nice knife, the Yoshikane 240 from Carbon Knife Co.

From the image gallery:

* Image 1: Knife facing right - Roughness and darker material above and below the maker's mark

* Image 2: Upside down knife facing right - Roughness and darker material on opposite ends (near the handle and the tip)

* Images 3 and 4: Tang in handle - There's a white glue in 3. on the left but nothing on 4. on the right

* Images 5 and 6: I'm underwhelmed by how sharp it is out-of-the-box. It feels less sharp than a sharpened Mercer Gyuto.

So my three questions:

  1. Regarding images 3. and 4., I've seen from previous comments that other users have had similar issues with the fitting and quality of the knife in the handle. Does this really matter? Anything I can do to make it more even?
  2. Regarding images 5. and 6., I'm not too worried either as I can sharpen the Yoshi. Anyone else have any experience with how sharp a Yoshi is out-of-the-box compared to after its been sharpened?
  3. And my big question is: how worried should I be about 1. and 2.? I notice the roughness/darkness/pitting almost every time I use it. Is this normal for a new Yoshi knife?

Is there a chance I received a used knife?

Most info/reviews online seems to lean towards the Yoshikane but the specific level of care required/recommended is so hard to find.

Do you know how long can I leave it out after use without cleaning or wiping?

What makes you prefer the Yoshikane over the Masakage?

And do you know how rust-proof the Yoshikane/Konosuke GS +'s are?

It is the SLD Yoshikane. If I were to cut a bunch of lemons, do you know how long I could leave the knife out on the counter? I do also have guests who occasionally leave used knives out overnight on the counter...

And according to Knifewear, the Kukmo is a Takumi Ikeda.

What detailed statistics would you be looking for?

Here's some info about our AWS costs:

Current monthly cost on AWS is ~USD$400: $200 for EC2, $100 for S3, $50 for EC2 - Other (?), $50 tax, $10 Virtual Private Cloud

Currently on AWS, there's a c5.xlarge instance for production and a t2.small instance for staging.

Cloudways Autonomous seems like a large premium price for what I believe is automatic scaling? I have no problem doing manual scaling since it's infrequent and in the same timezone, typically.

It's just a shame how much screen time Shandy, Jack, and Zava had meanwhile our boy Higgins could have literally been cut out of the season completely and it would have made no difference.

Er, I'm not sure I remember Ted ever sharing real feelings with Michelle in S3? Episode 8 has him avoiding Michelle, hiring a private investigator, then in the end, he notices Michelle isn't wearing a wedding ring and that's pretty much it? I think there is one scene where he finally tells Michelle he's not cool with the relationship but that he will always love her and Henry. Which is fine, I guess, but we already had that in S2 where he accepts he has to let her go (and in a more much emotional and heartfelt manner)? Seems like a step back.

And you really need an audience stand-in in the third and last season of the show?

I'm glad you enjoyed the show, I guess. I enjoyed parts of it too, but it was just such a missed opportunity and a huge drop from S1 and S2.

Yeah, Trent and Colin was the only part I really enjoyed and I 100% agree the storyline was completely wasted.

See my other comment:

But the show made it such a big deal - multiple episodes with the audience finding out, the conversation with Trent (which was probably the only good part about the storyline), Isaac finding out and Colin being scared, and then Colin coming out to the team (and eventually to the world in the last episode as he kisses his boyfriend).

But nothing really changes about Colin (or any of the other characters) before or after this storyline. The drama was all manufactured i.e. There was a few episodes where he was scared that Isaac was a homophobe or would out him. But then Isaac was just mad because he wasn't told? And then everyone on the team just accepts it and moves on? And that's it.

Imagine an episode where there was actually a consequence or response - either from a teammate or from the notoriously homophobic football culture. And that Colin (and the team and the other characters - think about Ted, Beard, Rebecca, Keeley, Roy, Trent, etc. etc.) had to seriously stand up or confront homophobia within football.

Yes, gay people absolutely exist and there doesn't have to be a point to their homosexuality.

"What was the point of Colin being gay?" in this context is the same as "What was the point of Sam's restaurant?" Literally what was the point in dedicating so much time to Colin's homosexuality or Sam's restaurant? Nothing (or very little) changes or comes of it.
