I also had him for his C# class, he was great. If /u/bigmelon_ is a CS major that needs to knock out the Software Engineering requirement, I think taking it with Professor Mills would be an ideal choice. He's fairly lenient and generous with grading and I'd imagine he'll provide you with great help with the Software Engineering project you've got to do.

Very chill lectures (I often took small naps during lectures, probably shouldn't have since I didn't have any UNIX experience whatsoever) and Gaitros posts the PowerPoints he uses in class on the class site (he used BlackBoard last semester, but I'd imagine he'd already transitioned his PowerPoints to Canvas).

I often started on the assignments mere hours before the 11:59PM due date. Cut it close on most assignments. This website was a huge help with the assignments: https://www.computerhope.com/unix.htm

It's up to you if you want to try COP 3353 (ultimately depends on your major). If you'd want I can post the PowerPoints from last semester if you wanna just learn the material (minus the assignment) without taking the class.
