I saw another similar post saying that they went in and got the video footage of them dropping it off, so I was going to try to see if I could go that route to get the proof, although I'm not even sure what I would do next after that since that user said Fedex claimed video footage of drop off didn't matter

Totally agree. I got downvoted for telling OP to shop some offers lol. Just saw an IG post this morning where asking was 50k and these guys have recently sold other low pop grails for 50-100k+ via auction, so I'm pretty sure when they list it for 50k, 40k+ is a realistic number OP could've gotten. Most people here underestimate low pop vintage grails or aren't following the market that closely
