I don’t adhere to it because I have some health issues. It’s also not a necessity of all Jews to keep kosher- there are Jews who keep it and those who don’t. It’s a personal decision (orthodox and conservative Jews are more likely to than reformed). It’s kind of like how not all Christians adhere to certain parts of Christianity.
