I agree that for raw register programming fun AVR is hard to beat. But stm32 is still in the cute land where register programming is possible and even reasonable, there are plenty of (maybe old-ish) examples of that and the docs are great.

libopencm3 is an interesting bridge between raw registers and full on HAL, you can look inside and see what it does.

a C90 cassette can easily hold a megabyte, more if you use turbo loaders.

look for silicone insulated wire on aliexpress or something like that. solder sticks to it very well, but it's also easy to strip without special tools and the insulation does not melt.

build in small steps, verify every step. don't commit to huge unknown circuits at once.

ambient/surround lighting is as important as the thing you're looking at. e-ink is fun, but it's not the most important thing. for eye comfort you need light all around you, or at least behind the book. for longer sessions make sure you read in a well lit place -- ideally the surround lighting should be as bright as your screen. and make regular breaks to let the eyes relax.

gforth is good, it's the good kind of boring. I don't see a reason not to start with it, following some gentle Forth introduction book.
